Nom Nom: Tocinillo Del Cielo

This particular Nom Nom is dedicated to our Mom, as this is her very favorite dessert. Personally, we find this typically Spanish treat altogether too eggy and way too rich (this coming, mind you, from a girl who regularly eats an entire carton of cake frosting in one sitting). Think flan but with about 16,000 more egg yolks. To each her own. If you’ve never tried tocinillo del cielo before, we recommend taking at least a nibble. Its name translates to “bacon from heaven,” so that’s a pretty promising start straight off the bat. Ok. Yolky, sugary bacon farted out by Jesus, here we go:
Ingredients:
1 cup water
1 lb sugar
12 egg yolks
2 egg whites
Directions:
Dissolve the sugar in the water and boil for 5 minutes. Leave to cool so the syrup becomes thicker; then pour some over the base and walls of the mold to coat.
Break up the egg yolks and whites in a bowl but without beating them, to prevent the formation of bubbles. Pour in the remaining syrup in a thin stream, stirring all the time.
Fill the mold with this mixture, cover with the aluminum foil and steam for 20 minutes. When cold, turn out.
Note: This dessert is often made in very small, bite-sized molds that only need to be cooked in the double boiler for 2 minutes.
When done, hand the entire thing over to our mom.

I don’t know about this one. I like the easy instructions and short ingredient list but all that egg yolk kinda turns me off. What i don’t eat I’m sending to your mom.

Makes their eyes glaze over. Its better than flan… and sooo much more excotic.
