Nom Nom: Mexican Hot Chocolate

As a nice compliment to last week’s Nom Nom — churros — we decided to go with thick, rich Mexican and Spanish-style hot chocolate this week. Unlike American “Swiss Miss,” this beverage is better served as a dip. This particular recipe gets much of its richness and yummy creamy texture from eggs.
It might take a little more time to prepare than packet hot chocolate, but it’s well worth it and make a really nice treat for the holidays. So don’t be a lazy asshole, ok?
Ingredients:
4 ounces unsweetened chocolate
4 cups milk
2 cups heavy cream
3/4 cup sugar
1 1/2 teaspoons cinnamon
2 eggs
3 teaspoons pure vanilla extract
Directions:
Melt the chocolate in the top of a double boiler.
In a separate heavy saucepan heat the milk and cream on low until hot but not bubbling. When the milk mixture is hot add 3 tablespoons of it to the chocolate and mix well. Blend in the rest of the milk mixture, the sugar, and the cinnamon.
In a small bowl beat the eggs and vanilla. Add a tablespoon of the chocolate mixture to the eggs and beat well. Slowly stir the egg mixture into the chocolate. Whisk the hot chocolate briskly in the double boiler for 3 minutes, then serve immediately.
Add extra cinnamon and even a touch of chili powder if you want to make your hot chocolate extra spicy. Serve with warm churros and enjoy!

Ah, see, we never drank that growing up. When I think “abuelita,” I think supermarket-brand cola or Tang.
There was a freeze today so I stayed home from work and made chocolate and champurrado. Yum!

Chocolate Abuelita is a staple in my family during the holidays and we serve it with a sprinkle of chili powder and a side of buñuelos. Yummy!
