Nom Nom: Mango Mousse For Summertime

Mango season is well underway, according to our parents back home. Which means not only is our father going to have to fight with a pack of squirrels to get to the ripe mangos in our yard, but that he and mom are going to need lots of recipes for them. We think this mango mousse (called a “Cuban Mango Mousse” in the original recipe, although we are sure mousse is the one thing Cubans haven’t invented) should do just the trick.
Ingredients:
- 2 medium mangoes, peeled and cubed
- 2 1/2 tablespoons honey
- 2 tablespoons fresh lime juice
- 1 1/4 cups heavy cream
- 2 egg whites
Directions:
1. Puree the mangoes, honey, and lime juice in a blender or food processor until smooth.
2. Whip the heavy cream to soft peaks, and fold into the mango puree.
3. Beat egg whites in a clean dry bowl until stiff, then stir half into the mango mixture.
4. When well blended, gently fold the remaining egg white into the mousse until no streaks remain.
