Nom Nom: Frituras De Caracol

You, of course, love sinking your face into conch. Here’s a recipe for frituras made with this salty-sweet seafood that would probably be a welcome addition to any BBQ or dinner party. We first tried this dish in the Keys one summer and have associated it with the season ever since.
Ingredients
2 cups Conch meat, pounded and chopped fine
1/4 cup Onions, grated
1/4 cup Olives, chopped fine
4 ts Pimiento, chopped fine
1 ts Garlic cloves, minced
1/2 ts Basil
1/2 ts Tarragon
3 ts Habanero Hot Sauce
1 Chile habanero, seeded and minced
1 ts Baking powder, sifted
1/2 cup all-purpose Flour, sifted
1 Egg, beaten
Oil olive for frying
Directions
In a bowl combine all of the ingredients except the baking powder, flour, egg and olive oil and set aside.
In another bowl, sift the baking powder and flour together and mix with the egg.
Add the first mixture to the egg mixture, stir well and let stand for 5 minutes.
Place the oil in a frying pan and bring up to 380F.
Carefully drop dough balls into the oil and cook until brown.
Remove with a slotted spoon and drain on paper towels.
These frituras can be eaten plain or served with a dipping sauce or hot sauce. Yum.

In the Keys or Aruba? They are good though.
Wasn’t it on Key West? Although possibly also in Aruba. In any case, having eaten so much good food that one cannot remember the sunny vacation locale in which one has consumed a particular meal is a nice predicament in which to be.
