Nom Nom: Three Summer Paleta Recipes

paletas1What goes better with summertime than icy, creamy paletas? Except perhaps a pool boy named Fernando. Heyo!

The recipe for paletas are all fairly easy, so we tried to focus on finding interesting flavor combinations that you might want to try out during your next pool party. 

Cucumber-Chili Paletas

Ingredients

3 cups 1-inch chunks peeled, seeded cucumber

2/3 cup sugar

1/3 cup lemon juice

1 rinsed, stemmed jalapeño chili 

Directions

Combine all ingredients, whirl until smooth.

Push mixture through a fine strainer set over a 2-cup glass measure.

Discard residue.

Pour into molds and freeze until firm.

Pineapple-Chile Paletas

Ingredients

12-16 oz fresh pineapple, cut into chunks

1 dried chile guajillo, seeds removed freshly ground

3/4 cup pineapple juice

1 teaspoon chipolte chile powder

1 tablespoon sugar (if needed)

juice of 1 lime

Directions

Add 3/4 of the pineapple chunks, all of the pineapple juice, chile guajillo, sugar, lime juice and chipolte powder in blender and pulse until almost smooth.

Stir in remaining pineapple chunks.

Divide evenly into ice pop molds, leaving a 1/4 inch at the top for expansion.

Seal and freeze until solid.

Peach & Honey Paleta

Ingredients

2 1/4 teaspoons unflavored gelatin

1/4 cup honey

3 cups peach juice 

1/2 cup cubed peaches

Directions

Combine gelatin and honey in a large, glass bowl.

Bring juice to a boil, then mix into gelatin mixture.

Add 1/3 cup cold water.

Pour about 1/3 cup of mixture into each popsicle mold.

Sprinkle cubed peaches evenly into each mold.

Freeze completely, at least 2 hours, and serve.
